  • 1 tsp baking soda

Instructions

  1. Preheat the oven to 250° C (482° F).
  2. In a mixing bowl, cream the butter and brown sugar until the mixture is smooth.
  3. Add in the grated carrot, grated potato, and the egg, and mix well.
  4. In another bowl, combine the dried fruit, currants, sultanas, and prunes with the sherry.
  5. Gradually stir the fruit mixture into the butter mixture.
  6. Carefully add the plain flour and baking soda, stirring until just combined.
  7. Grease a pudding basin with extra butter and pour the mixture in, smoothing the top.
  8. Cover the basin with parchment paper, then with aluminum foil, securing it tightly.
  9. Place the basin in a pot of boiling water, making sure it comes halfway up the sides of the basin, and steam for 2 to 3 hours.

  11. Store the pudding in a cool, dark place until ready to serve. When ready, steam again for 1 hour before serving.
