Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a pot, boil the chestnuts for about 30 minutes. Once cooked, peel and chop half of the chestnuts finely, and set aside.
  3. In a large skillet, melt 1/2 cup of the butter over medium heat. Add the chopped onions and cook until softened.
  4. In a large bowl, combine the cooked sausage meat, cubed gluten-free bread, chopped chestnuts, cranberries, sage, parsley, and the onion mixture. Mix well.
  5. Pour in the cognac, milk, and season with salt and white pepper to taste. Stir until everything is evenly combined.
  6. Stuff the turkey with the chestnut mixture, packing it firmly but not too tightly as it will expand during cooking.
  7. Rub the remaining butter all over the turkey, and then drizzle the lemon, orange, and tangerine juices over it.
  8. Place the stuffed turkey in a roasting pan, and cover it with aluminum foil. Roast in the preheated oven for approximately 3 to 3½ hours or until the internal temperature reaches 165°F (75°C).
  9. During the last 30 minutes of cooking, remove the foil to allow the skin to crisp up.
